Fudgey Dark Chocolate Energy Bites

On a whim, I made whipped up these chocolatey energy bites that pack a punch of protein and iron. It’s probably because 1) it’s cloudy today and I always want to be in the kitchen when it gets cloudy, and 2) I’ve been on-the-go a lot this week and these make the perfect take-along snack. These are super easy to make, taste decadent but are nutrient dense, and can be made to suite your dietary needs.

1/4 cup powdered peanut butter
2 tablespoons water
1/2 cup almond butter
1 teaspoon vanilla
1 tablespoon liquid sweetener*
2 tablespoons cacao powder
2 tablespoons cacao nibs
1/4 cup hemp seeds
1/4 cup oats*
Pinch of cinnamon

Mix the powdered peanut butter with the water in the bottom of a large bowl. Once smooth, add in the almond butter, liquid sweetener and vanilla. Mix until blended. Add in the cacao powder and mix until you’ve formed a dough-like ball. Add in the nibs, hemp hearts, cinnamon, and oats. Mix until everything comes together. Chill in the fridge until firmed up (about 15 minutes) and then form into balls. I made about a dozen. Store these in the fridge for easy grab-and-go snacks!

*I used local honey because it’s allergy season around here, but you could use agave or maple syrup to make it vegan

**If you wanted to make these grain free, I imagine you could substitute finely chopped nuts
