Vegan Snickers Ice Cream

Nick’s favorite candy bar when he was a kid was Snickers. He was what he calls a “big Snickers guy.”

Now, he’s a dental student, and probably hasn’t had a Snickers in 12 years.

Until today.

I made a Snickers ice cream. It can be made entirely vegan, or, if you’re not solely plant-based, you can work with what you’ve got on hand.

Ingredients:
2 bananas, sliced and frozen
1 cup non-dairy milk
Vanilla extract
Vanilla protein powder (optional)
2 dates, pitted
1 tablespoon peanut butter
Non-dairy chocolate chips

Directions:
Put the milk, bananas, vanilla and optional protein powder in the blender and blend until smooth. Add in the dates and most of the peanut butter and blend until they are incorporated into the mixture. Stir in the chocolate chips and top with a drizzle of the remaining peanut butter. Enjoy!

I will admit, I used dairy milk because Nick isn’t 100% vegetarian, let alone vegan. This provided him extra protein to recover from our long run this morning, but I would use vanilla almond milk if I were making it for myself.
