This past Sunday, members of the Adventure Club, AKA our group of friends that Nick has met through school, went on an adventure. Five of us piled in a car and hauled down to Jefferson Memorial Forest to do some hiking.
But first, every adventurer needs snacks.
I adapted Minimalist Baker’s Pumpkin Maple Pecan Granola, using what I had on hand: walnuts instead of pecans, almonds instead of pepitas, stevia instead of sugar, and agave instead of maple syrup. It’s so good, that I mad it again on Monday.
I also had an excuse to wear a pair of my new Swiftwick socks, which I am obsessed with. These pair are made of Merino wool and kept my toes warm when it was chilly.
At the forest, we explored the Tom Wallace Lake Loop, and the Purple Heart Trail, neither of which I’d been on much before. The leaves are just starting to change color around here, which made the adventure even better.
Though it was a great hike, we didn’t discover any abandoned towns, like some other adventurers did in the Great Smoky Mountain National Park recently. If you haven’t heard about this, check it out here.
